Cooking Time
15-20 Minutes
Yields
9 Large Cookies
Ingredients
1 cup of oat flour
1 cup of oats
½ cup of chopped nuts – I used raw brazil nuts and walnuts
½ cup of vegan chocolate chips
¾ cup of mixed nut butters – I used half almond and half sunflower butter
¼ cup of unsweetened coconut flakes
2 Tbsp. of flax or coconut oil
¼ cup of goji berries (optional)
1 ½ tsp. of vanilla
1 tsp. of cinnamon
2 flax eggs (2 Tbsp. of ground flax mixed with 6 Tbsp. of water)
1 scoop of protein powder – I used pea protein
2-3 Tbsp. of maple syrup (Use 2 at first and if batter seems too dry, add the 3rd)
Directions
Prepare the flax eggs and set aside.
Preheat oven to 375 degrees. Put parchment paper on a cookie sheet.
Combine all ingredients in a large bowl and add in the flax eggs last. Mix thoroughly.
Scoop out enough batter onto your hand to shape into a large cookie the size of your palm. Press firmly together.
Place onto parchment lined cookie sheet and bake for 15-20 minutes (depending on your oven).
Makes 9 large cookies.
*Feel free to get creative in your kitchen. Add nuts that you like, or even some pumpkin or sunflower seeds. You can even add in some ripened banana if you want. The possibilities are endless!
