A cookie for breakfast??  Yup, you can with this one!
Filled with healthy goodness…plus, it’s vegan and only lightly sweetened with maple syrup.
I added some good quality protein powder to start your day off right!

Almost every ingredient in this cookie has great nutritional value but the real powerhouse ones are:

  •  Flax Seeds- High in omega-3 fatty acids, fiber, protein, and antioxidants

  • Almond Butter- Rich in minerals, vitamins, and antioxidants

  • Oats- High in fiber, protein, vitamins, and minerals

  • Coconut Flakes- Rich in fiber, iron, and zinc

 So, you can feel great about starting your day off with this delicious and nutritious breakfast cookie.  Always get creative with your cooking!

Yields
9 Large Cookies

Ingredients

1 cup of oat flour 
1 cup of oats
½ cup of chopped nuts – I used raw brazil nuts and walnuts
½ cup of vegan chocolate chips
¾ cup of mixed nut butters – I used half almond and half sunflower butter
¼ cup of unsweetened coconut flakes
2 Tbsp. of flax or coconut oil
¼ cup of goji berries (optional)
1 ½ tsp. of vanilla
1 tsp. of cinnamon
2 flax eggs (2 Tbsp. of ground flax mixed with 6 Tbsp. of water)
1 scoop of protein powder – I used pea protein
2-3 Tbsp. of maple syrup (Use 2 at first and if batter seems too dry, add the 3rd)

Directions

  1. Prepare the flax eggs and set aside.

  2. Preheat oven to 375 degrees.  Put parchment paper on a cookie sheet.

  3. Combine all ingredients in a large bowl and add in the flax eggs last. Mix thoroughly.

  4. Scoop out enough batter onto your hand to shape into a large cookie the size of your palm.  Press firmly together.

  5. Place onto parchment lined cookie sheet and bake for 15-20 minutes (depending on your oven).

  6. Makes 9 large cookies.

*Feel free to get creative in your kitchen.  Add nuts that you like, or even some pumpkin or sunflower seeds.  You can even add in some ripened banana if you want.  The possibilities are endless!
